Resumen

Se realizaron estudios en diversas mieles recolectadas en el estado de Hidalgo, con el objetivo de determinar la presencia de compuestos bioactivos ya que este estado cuenta con una producción de miel de alta calidad que forma parte importante de la actividad económica de la región Huasteca. Se realizó una determinación de compuestos fenólicos y flavonoides, así como actividad antioxidante por medio de los radicales ABTS y DPPH. Por otra parte, se determinó el contenido de selenio por medio de espectroscopia de absorción atómica acoplada a generador de hidruros (HG AAS), con una digestión ácida previa. Los principales resultados encontrados fueron valores de 16.61±7.31 a 101.92±5.38 mg EAG/ 100 g miel para fenoles totales y 101.63±0.51 a 95.68±0.85 mg EQ/ 100 g de miel para flavonoides. Con respecto a la actividad antioxidante los valores más altos los presentaron las mieles de San Andrés para ABTS (357.19±6.96 mg EAA/100 g de miel) y Tehuetlán para DPPH (211.16±6.64 mg EAA/100 g de miel). En el contenido de selenio el valor más alto se presenta en la miel de San Felipe con 172.75±3.18 ?g/ Kg de miel y contenido más bajo se presenta en la miel de Huejutla (145.85±0.35 ?g/ Kg de miel).
